Prepped a saddle of venison

I got in another saddle of venison today. The same as this one. This is what it looks like off the bone. 2 Loins and 2 fillets. I use the bones to make a stock and then a reduction sauce.

And as for the glastonbury thing, I have decided not to do it as financially it was not worth working 21 hours a day for 6 days and only having £400 by the end of it. That's less than half the minimum wage so I thankfully declined!
