Thursday 5 May 2011: Raspberry Bavarois

Raspberry Bavarois with raspberry compote and vanilla ice cream on raspberry jelly.

We first made it with the raspberry tart, but the tart kept leaking so we changed it to the bavarois. Bavarois is a Bavarian cream in English. Kind of a creamy fruit mousse set with gelatine and egg yolks.

Sometimes I make a milk based Bavarois instead. One of my favourites is a triple chocolate where I do dark, milk and white chocolate or a dark chocolate, vanilla and coffee. When I do those they are layered and look very beautiful.
