Burning Off

I was walking down the street and I saw this guy working. In case the picture isn't clear. The black things are pigs feet and he has a mini flamethrower. I watched him for a few minutes and took a few pics but I had no idea what he was doing. AT first, I thought it was some type of pre-cooking but that just didn't make sense.. I then thought that maybe the black colouring made them special for this particular restaurant. I must admit I walked off a little perplexed. I was also a little dismayed at the hygene of his operation. He just chucked them on the street and did his business.

When I got a little further down the street I SMELLED what he was doing and understood.
