Pasta Making

This is to make spinach and ricotta ravioli. Bit boring flavour wise really but I serve it on a ratatouille of mediterranean vegetables in fresh tomato sauce with a rocket salad and pumpkin oil.

Making pasta is one of those therapeutic jobs. Requires a lot of patience. But I love making it! The pasta machine was a present from my mum when I passed my chef's exams in Holland in 1993. It's still going strong!
