Turkish ladies preparing traditional Gözleme - dough rolled and rolled to gossamer thinness before being filled with spinach, meat, cheeses... It is then baked on top of a hot, oiled iron stove. I was fascinated to watch the ladies work, sat on a large table surrounded by bowls, with large circular wooden boards before them and very long rolling pins. They were a very efficient production line, the first rolling the dough to a wide circle, before whisking it onto her neighbours board with her pin, who rolled it thinner and thinner, flipping it around the rolling pin. As soon as her neighbour was done, this was flipped onto her board and she then folded and filled it with whatever was requested before being transferred to the stove. we were ushered into a cabin on little stilts where we sat on the floor on cushions around a low table, whilst tea and gozleme was brought to us. All rather civillised.
