Turkey eggs are becoming more available in markets, even in Waitrose. Many fewer are produced than hen, duck or even goose eggs but, apart from being good for cooking, they are exceptionally beautiful. These are from a WI 'Country Market'. Two of them are about to become an omelette, which (unfortunately but proverbially) cannot be made without breaking them.
