Mousseline aux asperges

Well, S got back yesterday from his week away walking part of the the chemin cathare from Foix to Quillan with his walking group. So to celebrate we had dinner at our local restaurant, le Clos de Mauzac. We should go more often than we do; Guillaume, the young chef, cooks refined food with fresh local ingredients, and presents it very elegantly. Menu (mise en bouche, starter, main course, cheese, dessert): 26 euros. We drank an excellent (very) local white wine, which we picked because of the name -- Premiers pas sur la Lune -- and left feeling very contented and not overfed. A bit different from yesterday's evening meal :)
