Thursday 24 May 2012: Southern clams

Last year I worked on a project for Seafood New Zealand - which I really enjoyed for lots of reasons.

One reason was that I found out about lots of people doing interesting things with fish - including Southern Clams. They're based in Dunedin and it turns out their clams have always been available at my local Pak 'n Save but I'd been walking past them for years. They are really delicious and very economy gastronomy.

Tonight I made a pasta with clams, leftover leeks and fresh beans on top.
