Supper from the sea

The Fish Dinner at Fishguard's Transition Surplus Food Cafe was a great success.

Although I had to make a flying visit to Cardiff during the day (5 hours in the train), I arrived back at 7pm just in time to plunge into the final preparations in the kitchen.
Our guest chef had made a rich bouillabaisse using several varieties of fish which included conger, dogfish, skate and gurnard. This was preceded by a seafood platter consisting of a crab bisque, crab cakes and whelks in pepper sauce. and followed by a choice of desserts (chocolate pots or maple banana icecream)  made by me from ingredients that would otherwise have been thrown away.

Here, the fisherman's wife is giving a demonstration on how to extract the meat from a crab and later on there was a discussion on how people could start to source the local catch for their own use, and thus encourage fishers to bring in non-standard species that are otherwise thrown away or used for bait. That way everyone would benefit and long-distance imports and exports of seafood could be reduced: we  need to Guard our Fish stocks by not relying so much  on the familiar old favourites.
