This is traditionally the way the mole catcher proves how well he is doing his job. It looks a bit barbaric but at least whoever is paying his wages can see he is earning his money.
It wasn't possible to do this when the moles were poisoned with strychnine as they died underground however that method has been banned so the most common method is the traditional traps.
In the background you can see big bales of haylage if the moles were allowed to burrow and push up their little hills in this grass field when the grass is mowed and baled there is a risk of soil contaminating the crop which can lead to spoiling of the bale and loss of winter feed for the livestock.
