Frittering breakfast away

After making a courgette lasagne and a courgette cake, I still have courgettes left over in the fridge!! What to do, what to do?? ... And then I remember this delicious, lazy Sunday breakfast that was popular in the cafes back home - zucchini & corn fritters.
