Pig Roast

The best fund raiser for Bitterroot Therapeutic Riding is the pig roast. Rick roasted this monster for 15 hours to perfect tenderness and taste. You'll notice we took the head off before presenting it. Some of the DD kids freak out if they see it and it's very hard on them. It took us over an hour to break down the carcass and carve. Shortly after this picture, our table was mobbed as our flashing blades reduced old roly-poly into slabs of meat for the diners. We brought home some lovely chunks for the freezer since we are leaving for Utah and Colorado in the morning.
