Spelt loaf

I have it on the greatest authority that this rather pallid mess will turn into a golden brown loaf just in time for dinner tonight. I am also told it is wholegrain grain Spelt, which is a favourite at the moment. We love the nutty taste. Anyhow, it (the pallid mess) has risen well, and the transformation into the aforesaid golden loaf is nothing short of amazing.

For those interested in Spelt, it is a very old species of wheat. Spelt was an important staple in some parts of Europe from the Bronze Age to Medieval times, and is now making a comeback.
