I thought I saw a challenge to blip a meal and include a recipe. Now I come to check, I can't find the details but as this is the only suitable photo for today's blip and if I have got it wrong, well so be it!
Roasted breast of chicken with goat's cheese under the skin, streamed asparagus and celery with conchiglie in home made tomato sauce
For the tomato sauce:
Gently fry 6 chopped garlic cloves in olive oil
When slightly coloured, add a large handful of well chopped parsley
After a minute, add 1 chopped onion
When the onion has softened add a 400g tin of chopped tomatoes + half a tin of water used to swill all the juice out of the tin
Simmer for about 30 mins, the sauce will have thickened and reduced.
Season with salt and black pepper, add torn basil leaves if desired.
Sprinkle with Parmigiana or other hard cheese, grated
Serve with any type of pasta.
If there is any left over it is wonderful topping for melted cheese on toast, as a base for pizza, or a cheating way of presenting bruschetta
