Squashed

A very long, full-on and exhausting day of work. I allowed myself a short break around the middle of the day in order to go squash-gathering up Leith Walk. However, I was evidently so distracted that I forgot to take the camera, so had to make do with a photo of the squash once I'd peeled it, taken out the seeds and fibres and cut it up.

I cooked it with some onions, fresh chillis and coconut milk(with the emphasis on the chillis) - very simple, but very good.
