Mango chutney

Well of course it just had to be after yesterday's blip of the mangoes!

There are so many recipes on the internet for mango chutney that it doesn't do to look at too many, so I settled on one by Madhur Jaffrey and followed it, with the exception of leaving the mango sprinkled with salt for 24 hours as I wanted to get it done. It seems to have thickened alright anyway and tastes delicious. It's now bottled and cooling, and I've heard four of the five jars click so far indicating that a vacuum has been created, so that's ok.

Now then, where's my curry chef?
