Evening Snack

Quick evening snack after having Sunday dinner with my folks.
Grilled crumpet and Parma Ham with a poached egg and plenty of pepper.
I love the way that the yolk soaks into crumpet. Would have been even better with some slow roasted tomato and pesto but you have to work with what you've got and it's Sunday night.

There were basically two schools of thought in the restaurant when it came to poaching eggs: with or without vinegar.
I'm very definitely in the without vinegar camp. I know that the acid is supposed to help coagulate the proteins in the white but I've never found it necessary and in my opinion the vinegar taints the flavour.
