Vegan Comfort Food - Caribbean style!

We attended my sweetie's monthly cooking class together. Usually the class is during the day while i am at work but since it was an evening class and i was free i went along. It was the most delicious food i have ever tasted...the fact it was vegan was a bonus! Fake cod fritters (eggplant)/aoeli, shepards pie, mac & cheese (with butternutvsquash), apple crostini and anglaise sauce, oh my! It was beyond incredible, we were blown away! Chef Taymer Mason (originally from Barbados, then a decade in Paris and most recently a Toronto resident) was so good i went out and bought her incredible cook book. She is a private chef/events and currently working towards opening a restaurant (we suggested adding a food truck too!). These photos are of the mac&cheese and apple crostini, along with the plating of the crostini. All we could say was 'wow'!
