to Brew

Yes that time of year has again arrived.  These are our first apples of the year that have reached maturity.  The variety is called Discovery and they are destined to be juiced and form part of a brew up of apple champagne.

However because they are earlier than the remainder of the apples the juice will be frozen for a fortnight or so and then combined with other apple varieties.

That way one achieves a good depth of flavour in the final brew.
