Sunday roast on a Monday

During these lockdown times the days merge together. We had two family members visit (socially distanced outdoors) on Sunday so we didn't have time to do the usual roast.

Roast chicken with two hot lemons inside to keep it moist, pancetta and herby butter stuffing under the skin. Roast spuds and carrots, and steam and greens.

I was particularly pleased with the gravy. It was good but missing something until I realised it needed balancing. I chucked in a big glug of balsamic vinegar then spanked the flavour up with a tiny pinch of chilli flakes - then it was worth fighting for.
