Pistachio Mole

Chicken with pistachio mole, rice, grilled corn, and grilled peach (not pictured). Wine: Andrew Murray Viognier 2020.

The flavor of the mole was surprisingly subtle. The chicken was poached in white wine with avocado leaves (a non-toxic species) which lent a nice flavor. I forgot about the peaches and didn't plate them until mid-meal.
