Spectacular Spinach Lasagne

Homemade by SJ, the tin weighed at least 10 pounds. I cut it into squares and froze several for future evenings. What a treat! Didn’t blip the Turkish red lentil soup dinner that CC brought right before surgery. Delish!

So grateful for the therapists who visit and all the support from family, friends, and neighbors.

We were told today it will take 9-12 months for Mr Mole’s cervical spine to completely fuse with the implanted rod. So we live life in the very slow lane for now, but that’s ok. He is making progress every day!
