Tonight's dinner was a crustless quiche experiment, both of us (son and I) agreed it was good and quite soufflé like. It had flour mixed in with the egg and milk, and so I used gram flour plus baking powder as the Zoe way is to keep wheat to a minimum... I think because it can lead to inflammation... although I need to look into this. Most of the Zoe stuff makes sense to me but there's the odd thing that doesn't.
