Rhubarb Curd

Looks a bit disgusting, tastes delicious.

I am always on the lookout for rhubarb recipes and came across this one earlier in the summer. I guess if it was made earlier in the season the colour would be more pink. However, as there is lemon zest in it it tastes like lemon curd with a little something extra.

I thought it best to try it, health and safety of course, before I let others sample it.

Can report that it goes well with scones (homemade would be better) and would imagine it would be nice with a little shortbread too.

Grainy. ISO was set yesterday and I forgot to alter it today. Doh!
