Oysters come from Halibut Cove, which is 80 miles from us across Kachemak Bay from Homer. Put 7 unopened oysters on a plate, put in the microwave for one minute, and as soon as one opens, take that one out. Continue at 30 seconds at a time, watching all the time, and as each one opens take it out.
Done to perfection. Pick the oyster off the shell with a fork, pop it in your mouth, and savor the flavor of the sea. Drink the salty brine from the shell. Exquisite.

The flavor of these oysters is so delicate we never add anything. Nature has provided all.
