Pumpkin Time

With Halloween on the horizon let's not forget that as well as hollowing it out you can eat pumpkin!
Here's a couple of recipes.

A Mauritian Pumpkin Recipe which is Fab

Pumpkin (Giromon)
Ingredients

500 grams pumpkin
1/2 teaspon methi
1/4 onion, sliced
3 curry leaves
1 teaspoon thyme leaves
1 tablespoon coriander leaves
1 tablespoon oil
Salt to taste
A pinch of sugar

Instructions
Peel the pumkin and wash thoroughly
Cut into cubes
In a pan heat the oil and add the methi seeds and stir for a few seconds
Add the onions and curry leaves and let fry for a few seconds
Add the pumpkin and stir
Add a little water, cover and let it cook until it is completely tender
Mash the pumpkin with a spatula and stir well
Add salt to taste
Add a pinch of sugar
Garnish with coriander leaves

And.

A Chutney recipe

2.25kg (3 lb) pumpkin, peeled and chopped
salt
225g (1/2 lb) cooking apples - peeled, cored and chopped
225g (1/2 lb) shallots or onions, chopped
225g (1/2 lb) sultanas
225g (1/2 lb) demerara sugar
300ml (1/2 pt) malt vinegar
1 piece root ginger
12 peppercorns
sliced red or green pepper (optional)

Method

Prep:15min › Cook:1hr › Extra time:8hr resting › Ready in:9hr15min

Place the pumpkin in a pan, cover liberally with salt and leave overnight. Next day drain and rinse in cold water.
Place all ingredients in a preserving pan (tie ginger and peppercorns in muslin) and cook until it has a thick chutney consistency.
Then put in jars
