Deep-Fried Mars Bar (deconstructed?)
We went to a Burns Night Supper at Humble by Nature tonight, where the chef was finalist of Masterchef, Andrew Kojima. He's half Scottish, half Japanese, and having decided for the dessert course on deep-fried Mars Bar (famous product of Scottish fish and chip emporia), tried a Mars Bar for the first time in his life and thought it horrible! So he did his own version: Acorn parfait, caramel and star anise sauce, chocolate tuile, and a few other bits and pieces. It was superb. Not deep-fried, admittedly, but up there with Abergavenny's Pizzorante's semi-freddo, to my taste buds, and I do not say that lightly!
Cath has blipped another aspect of the supper here, with the haggis being murdered!
