Lamb's head

put it this way: you don't eat lamb's head every day - you don't eat lamb every day either

we bough half a side of lamb before easter, which was turned into a number of dishes, for the easter period, for dinners we hosted and a couple of sunday meals

when you buy half a side of lamb in crete, you are given the choice to buy half the head or the whole head - i chose the whole head, which i froze, and let boil for a good 90 minutes, after which i placed the seasoned head halved in the grill

the broth that the head cooked in will not be wasted either - i stuck a bag of pasta in it, and it will be the dog's dinner for the next couple of days

waste not, want not
