Judging by all the blackberry blossom about, it's going to be a bumper year for this volunteer & nutritious fruit.

To make this free bounty last 'til Christmas, why not make blackberry vodka. Get a good air-tight jar & for every 500g of fruit, mix 100 to 300g of sugar (depending on whether you want a dry aperitif or liqueur) with 500ml of vodka; store in a cool, dark place & give the jar a good daily shake for a fortnight, & then forget about it until Christmas.

When the time comes, strain the liquid through muslin, & reserve the berries (which are amazing with good vanilla ice-cream) & bottle - this is a great drink, & could make an excellent present (if you're daft enough to give it away) ... enjoy.
