Making pastry is one of those everyday activities that not only offer me an opportunity for mindfulness, but positively require it. If my mind wanders and I stop paying attention to what I'm doing, I invariably find I've overworked the mixture and it ends up being tough and hard.

So I was pleased when my shortcrust for today's courgette and blue cheese quiche turned out light, easy to roll and not too crumbly. No cheddar in the fridge, but some Blackstick's Blue made a very acceptable substitute.
