I discovered later that pounding shredded cabbage for sauerkraut is as pleasing and therapeutic as kneading dough.

Pounding cabbage while sitting in a lovely tidy garden drinking tea, surrounded by vegetables growing and freshly harvested garlic bulbs drying gently in early autumn afternoon sun, made it even better.
