Fine Day for a Fennel Salad

I was working from home today - and I can't say what a pleasure it was to eat a decent salad, just made. This contained avocado, pomegranate seeds and oranges as well as the fennel and left over figs from breakfast.

Fresh salads are ridiculously hard to come by when you are on the go. Although I have to say York station, which I had occassion to visit recently, has 2 great fresh food outlets. Let's hope they thrive because it is a real treat.

Salad made at 6am every morning before work, is never the same after 4-5 hours, including transit from one part of the country to another. Hurrah for work at home days!
