Cider vinegar fermenting nicely

I started this off 2 weeks ago from scraps of apple peel and cores - the by-product of making apple leathers.

I strained the liquid from the pulp last week and, despite the surface scum, I'd say it looks very promising. Each time I open the jar, there is a good hiss of gas.

3 more weeks to go for my first batch of home-made vinegar. Excited.
