Beetroot, Avocado and Tomato Salad

There are still a couple of days to go before Tony is supposed to have hot food again. One of the spin-offs is that it's spurred me on to be a bit more creative in thinking about menus; the results have been quite colourful and tasty, as well as healthy.

So tonight it's beetroot (freshly cooked), avocado and tomato salad. Looking good on the plate - just needs a drizzle of lemon olive oil over the avocado and a sprinkling of chives. There are times when I think I could quite happily become a full-time veggie...
