Smoking Pheasant

My apprentice brought me some pheasants as he lives on a farm where they have a shoot. As the flavour of these birds is not always the best I decided to smoke some of the breasts and I will use them for a stewy/casserole type dish I think. Or I might just use them with a salad of fresh crispy leaves with granny smith apples and a white wine vinegar dressing, some pine nuts and croutons.... I will decide tonight.
