Vegetable Terrine

This is a celeriac terrine set with agar agar. Agar agar is a seaweed extract which can be a vegetarian substitute for gelatine. Although the terrine is vegetarian, I serve this with a Confit Duck Leg. Agar Agar is great as it appears like a jelly but it can be served warm unlike normal jelly. It is also a litle firmer than the normal jelly.
I tried to achieve a vegetable mosaic but I need to use more vegetables next time.
