Seared Swordfish Loin

Seared loin of swordfish on minted pea puree with roasted red pepper marmalade and saffron dressing.

This is a photo of a photo because it is my day off today. This was one of the first fish dishes I put on the menu when I started this job. It was part of a 12 course taster menu. I haven't cooked that for a couple of years but now I have just seen the photos I might ask my boss to push it again.

Last night was very busy again. Absolutely lovely. There is nothing better in my job than the adrenalin I get from a busy service. Especially when I get compliments and everyone is happy!
