I spent the week-end at a friend's, and I suggested an all-Italian menu for the three days. I did most of the cooking. it received much appraisal :-D

Supplì are an Italian dish, more of a starter or apéritif piece in my opinion, which consist of rolling a cooked risotto into a ball, breadding it, and deep-frying. You can add a core of anything you wish - here I opted for smoked salmon.

It's pretty easy to make, but you have to accept that your hands will get somewhat greasy in the process.

For risotto, the difference with the method I describe there is that instead of adding the liquid all at once, you add it progressively, one ladle at a time, and add three shots worth of wine between each addition of stock (the liquid - dissolve some stock powder or stock cube in water; do not use instant gravy, that's just disgusting as it is)
