Sunday 14 June 2009: My first Carrot Cake!

The title says it all...

This was my first attempt at Carrot Cake from scratch... I've developed an allergy to walnuts, which makes it difficult to enjoy carrot cake when I go out, so I decided to find a recipe that I could modify to my taste... Well, the recipe called for a pound of shredded carrots... Nic was convinced that a pound was too much carrot for any cake, but I can assure you, it was the perfect amount...

The cake was bursting with the flavor of carrot, raisin and pineapple... and the fresh whipped cream cheese frosting was sweet, but not too sweet! I have to say that other than making the mistake of frosting it before it was completely cooled, this was an amazing cake!

I think I would like to be a baker!
