A Muslim street vendor uses a wooden hand mallet to make an imprint on the dough before passing it to his partner to bake in the oven. The vast majority of Chinese Muslims hail from, restive, Xinjiang province in modern China's far north west.

It's a cool day today, 12 - 14 degrees celsius., so his partner warms her hands over the heat while waiting to pop the circle of dough onto the wall of the oven to bake. This tasty bread usually costs 3 RMB a piece.
