Cheesed Off

What to do on a quiet evening in? Make cheese of course, what else? My sister gave me a kit as a Christmas present so thought I'd give it a go. And while I can report that I now should actually have some home-made, soft cheese available for tomorrow's breakfast, it wasn't quite as straightforward as the instructions imply! For a start, the one hour for the curds to set turned into about 3 hours and trying to keep the milk at a constant 30C for 3 hours was a bit of a pain. In the end, when the whey was drained away the curds were way too soft for me to put into the cheese molds and they got ladled into a muslin bag instead, ready to spend the night dripping into the sink. They taste OK though - thank goodness!
