Party Preparation

The good thing today was, that I HAD TO finish work early in order to meet Neil at Costco and do the final food shopping for tomorrow's party.
We met there at 5 pm and ran through the aisles to get the meat, fruit and veg for the next day.
Neil had decided to also make some Coconut Macaroons and there was no coconut at Costco. So we had to go to Tesco as well to stock up on sweetened condensed milk and desiccated coconut.
At home we started baking (Neil) and other prep (Kerstin).
I found some nice recipes for finger food and marinated the small mozzarella balls with oil and herbs in order to assemble with small tomatoes on cocktail sticks the next day. I also prepared omelettes which then were rolled together with smoked salmon, cream cheese and ginger to be cut the next day. Further I prepared a slaw, kale salad, boiled 20 eggs and marinated ricotta and feta. 
Neil baked 2 batches of salted caramel brownies and 2 different recipes of coconut macaroons. one recipy I found only in the morning and we were intrigued as it was with butter and called a "genius recipe" :)
We finished at 1 am or so, had a small glass of wine, sampled the macaroons and dropped to bed.
Those with butter were better by the way :)
