Setting Symi

The Old Market.

Symi is an island of national architectural importance and that means it is protected by the strictest building regulations I've ever heard of. No new buildings are allowed, everything must be rebuilt from what is already there or was probably there, once. And, once you have permission to rebuild, it must be in accordance with the neo-classic byzantine style.

So this amazing hotel has been rebuilt from the original byzantine market place and it is stunning. The extra is the bathroom built into the oven of the bakery ....and the theme continues in other shops/rooms.
