Sage

I bought some at the farmers market for the princely sum of 10p. I had the idea of making a healthy twist on saltimbocca (with white fish instead of veal).

The sage leaves needed a little drink of sugar water to perk them up. They are now they are plump, fragrant and ready the be baked in the oven between a fillet of sea bass and a thin slice of spek.
