Make the best pies!

This is Creamed Turkey En Croute. Easy as ... Well pie!


I medium onion
1oz of butter
Splash of oil
3 oz of pancetta lardons
1oz plain flour
12 fl oz of cream
2 tbsp brandy
Handful if chopped parsley
12 oz of leftover chicken or turkey
3oz of chopped mushroom
1 packet of puff pastry

Sautée onions and pancetta in butter and oil until soft and golden

Sprinkle flour over onion and stir until all the butter has been absorbed.

Gradually pour in the stock, stirring

Add cream, brandy and parsley and mix

Allow to cool

When cool add chopped turkey and mix


Roll out pastry to a 12inch sq. place on greased baking tray and pile turky mixture into centre.

Draw the corners of the pastry into the centre and crimp edges together to seal and make a parcel leaving a small opening at the centre. Brush all over with beaten egg and bake in preheated fan oven at 180c for 30 -45 mins or until golden brown.

Serve with Boulangere potatoes and green beans and peas!
