Carrot jam!

What do you do when you buy 2kg of carrots by mistake (rather than just the few that you really wanted)? Make carrot jam of course! I followed a Mrs Beeton recipe my sister-in-law gave me. Apparently it should taste like apricots rather than carrots. I'll wait until it has cooled to give it a taste. I do hope it's nice. I had never thought of making jam from carrots before!
