What’s inside?

I was sitting outside at Pimms o’clock and thought I’d see what the inside of a poppy seed head looks like, so I broke a couple open.

The inside looks like this. Who knew?

I was expecting the seeds to be black like the ones in the shops. Maybe that happens later or is a result of the way they’re processed.
