Lemon Meringue Pie

The cooked version of this one.

I actually didn't do what I said in that post because the first lot were ruined by soggy pastry. I was so concerned about the meringue being right that I totally forgot about the pastry. So now we keep everything separate and we assmble the pie to order, it works a treat!

Very unproductive day today. The NVQ assessor was in for my apprentice so he did most of the work and I just did some paperwork and nearly finalized my new lunch menu.
