If anyone ever needed a reason to keep their own hens I would offer this as one of the top 3.

HOME MADE LEMON CURD!


There has been no colour adjustment. The intense golden yellow colour is due to egg yolks produced by chooks with plenty of lush spring green grass to eat. Of course they do eat lots of bugs and worms and many other things that some might not want to dwell on but that's a balanced diet if you're a hen.

To make lemon curd you also need butter and sugar and lemons and someone available to stand over a hot pan with a whisk. Lucky for me there was just such a person in the house. The working day is much more pleasant when one is handed a slice of bread dripping with sharp, sweet sticky gold.

Does tend to make the keyboard a bit sticky though.
