Orange and White Chocolate Muffins

Yesterday, while exchanging some comments with Northern, i thought i could have posted some of my kitchen experiments!...so here i am today with this muffins! Now the house is pervaded by the delicious smell of freshly baked muffins...mmm...i also "had" ;-) to try one...even if not cooled completely...so good!!!

I love to cook, i love to experiment and create with food....and i have also an insane passion for cookbooks (i need some theraphy maybe!?;-D) and food magazines!
Anyway...one of my favourite things to bake are Muffins....in fact lots of friends call me Miss Muffin!;-) ...and i'm "adored" by my colleagues that are my usual guinea pigs...and always like what i let them try!;-)
I enjoy to cook muffins cos they are quick to prepare and bake and cos u can experiment a lot...make them savoury or sweet, mixing different ingredients and flavours!

So here you have this recipe!!!!
It was originally in cups but as we don't use cups here in Italy i converted in grams!

Orange and White Chocolate Muffins

Ingredients

300 gr all purpose flour
2 tsps. baking powder
1 tsp. baking soda
a pinch of salt
120 gr unsalted butter, melted and cooled until tepid
2 large eggs, lightly beaten, at room temperature
120 gr cup granulated sugar
120 ml orange juice
1 tsp. vanilla extract
1 orange, zest only, finely chopped
100 gr white chocolate chips

Instructions
Position a rack in center of oven and preheat to temperature 180°C.
Line muffin pan with muffin cups. In a medium bowl, whisk together
butter, eggs, sugar, orange juice and vanilla extract. Add orange zest to egg mixture and whisk until thoroughly
blended. With a rubber spatula, fold egg mixture into dry
ingredients, folding only until dry ingredients are moistened.
Stir in white chocolate. Using two spoons, fill muffin cups
3/4 full. Bake muffins 25/30 minutes, or
until golden. Cool muffins in pan, set on a rack.
